Interior refit charter-type boat for cruising

I am looking for ideas on how to modify the interior of my Beneteau 46 for ocean passages for a couple. The boat was built for charter purposes so has plenty of sleeping accommodation but very little easily accessible storage. I don't want to do any major re-work (and possibly jeopardize her structural integrity). A simple change would be to remove the matrasses from the extra birth and install some shelves. I assume there must be folks here who might have done something like that and might be able to share their ideas. Thanks in advance.
