Re: Only allowed one cook book, which one would it be?

The America's Test Kitchen Family Cookbook. Much more than just a collection of recipes.

AMERICAS TEST KITCHEN. It is the best, plus it has a great index so you can actually find things.

And looking at one example, I don't think I would even try that:

Mince Pies.

Ingredients.—Mince meat, a sufficiency, and puff or short paste Recipes (see page 18).
Roll out the paste to a suitable thickness, line with it the patty pans, previously well buttered; put in each sufficient mince meat, make lids of paste, cover over, press lightly at the edges, neatly trim round with a knife, and bake in a moderately quick oven. When done, sprinkle with powdered white sugar.

Re: Only allowed one cook book, which one would it be?

This topic is kind of like herding kittens, all over the place. So if you think your answer of I have lots downloaded on my kindle or tablet works, it doesn't. You can still name one book you go to on your kindle more than the others. It doesn't matter the medium, contrary to Marshall Mcluhan ("the medium is the message"). You can have a micro dot epoxied onto your butt with thousands of books in it, but which one of those thousand do you go to most?

Re: Only allowed one cook book, which one would it be?

The Complete Cook by Pat Jester

It's great in that it gives you a base recipe, with a bit of the underling reasons why certain ingredients/techniques are used, and then variations on the recipe . So the bechamel sauce recipe has variations to make a cheese, morney, velout, etc sauces. There's a pot pie recipe, with variations for beef, chicken, etc.

It's very versatile.

The Fanny Farmer Cookbook ! This is the woman who came up with the idea of measurements in recipies. She ran a cooking school in Boston. Written in the 1800s but full of great info. on all tips of food use and storage. From butchering to fine sauces. also info on substitue ingredients ie: using milk with a little vinegar when a recipe calls for buttermilk and you dont have any available. A great all around book.

Weber’s “how to grill”... for me one of the best cookbooks out there for basic and advanced grilling.

Former restaurant owner here. On Food and Cooking, by Harold McGee, has been around for years. Understanding how food works means that, while cookbooks are great for inspiration, you'll never actually need one again.

If I can only pick one it would be Joy of Cooking, Fourth edition - 1951 I think. Doesn't assume unlimited fridge and a lot of appliances I don't have.

Second would be McGee On Food and Cooking. Third MtAoFC. Fourth The Boat Galley Cookbook because Carolyn is my friend and she wrote a good book.
