I just rig up a rope chair. After a while they realize they can stand in the loop and launch into the water...

Our children enjoyed riding in the bosn's chair clipped to the clew of our genoa when the conditions were safe; role playing & presenting short plays; making and serving snack trays in the galley; taking turns at the helm; constructing small model vessels and towing them behind our own boat.......and many of those other ideas mentioned above.
