Boatload Provisions

Hi,
I'm a brand new member living in Nayarit. My business there is Boatload Provisions. I shop and cook for boaters in the Nuevo Vallarta and La Cruz marinas and I love my job!
I would love to have some input from you guys on what you'd most like to be able to whip out of the freezer, what you wish you'd taken last time, anything that might come to mind that you consider unmissable.
I'd also like to hear about provisioning disasters and mistakes because I don't intend to make any!

Provisions

Always seem to come up short on the cerveza! We do weekend to weeklong trips on our boat that does not have a refer... Info on provisioning without a refer would be good.

I've always had trouble keeping salad makings alive. The first thing I buy when entering a new port is salad ingredients and steak.

I read in the book "sell up and sail" that one problem with Fruit and Veg is when buying from major vendors it has often been chilled to the point that it has been killed.

Thier recommendation was to use farmers markets as often as possible to reduce the chance of buying pre-chilled (almost frozen) supplies.

Afterwards, I took notice of the day to day fruit I buy and they appear to be right. Stone fruits, apples etc just dont seem to last on the shelf the way they used to.

Hope this helps your salad problem somewhat in the future

I'm always looking for fresh, non-refrigerated fruits, veggies, and eggs.

I'm also looking for butchers that can create portion controlled, vacuum packed and frozen meats, fish, and poultry.
