That's not tea....surely not all English rely on tea bags? Blech!
Water temp and timing depend on how the leaves are processed, and by gum one had better use full leaf tea, not the bagged stuff! Tea bags, imo, are a criminal invention designed to maximize profit for the seller, whilst depriving the tea drinker of any real tea flavor. By the way, I am American and do not say "whilst" in real life.

Come to the Philippines, there is great coffee here.

Bo's Coffee is a national chain and roasts a local bean grown in the mountains. Very good.

There is Batangas Brew which is a good roast you can find in Luzon.

Also I picked up some beans from Davao Roasting Company and is very good coffee.

Just a FYI I am from Seattle and am a coffee addict and spent my spare time trying all the different roasts in the northwest so I have a good comparison. Although I hate Starbucks passionately hahaha.

I left Seattle in Oct 2015 and I'm still finding bags of coffee I stored in the boat!

Civet Coffee from Philippines (Mount Apo region near Davao, Mindanao, Philippines)

Considered the "Most expensive gourmet coffee in the world."


This Animal Planet video shows how it is produced, as "poop" from the Civet (a mammal) that eats the coffee berries and then defecates them. Those defecated beans are then roasted.

Civets feed on the fleshy pulp of fruits like coffee cherries. They’re very good at picking the best and ripest coffee cherries. Enzymes in their digestive system break down the flesh of the fruit and what remains are the coffee beans. After the beans are exposed to some special digestion process, the civet takes a dump. The poo is rinsed away and the beans are collected.

I've had civet... I'd describe it as earthy. I think it's brilliant marketing re how to turn a cash crop being consumed by a local animal into money instead of fighting the pest.

I haven't tried it yet but it's in my list. Not convinced it's any better yet hahaha

Yes there are counterfeiters out there.
There if you go to a reputable grower/roaster and get the real thing, you will know it is the best coffee in the world. Nothing compares to it.

In Costa Rica BRITT coffee is the national obsession for good reason. Local copy cat brands cannot seem to get close.

A couple of years ago my wife's friend turned us on to Community Coffee from Nawlins' yet available on Amazon. Been in business family owned since the 1930s.

Whatever you get, only use whole bean and grind it yourself that day. That is the real secret to great coffee taste.

I hate to admit that Ive yet to try Geisha...seems over hyped to me.

There is a local gringa with a small coffee finca who makes our favorite here...PM me and I will send you her info.

We just returned from a hike in the Tizingal mountains today and walked thru several coffee fincas. A few fresh plucked coffee beans for extra energy.

Flor de Chiriqui is a bit mild for our tastes, but its all about personal preference.


Our favorite by far is still Dieseldorf Kafe grown in Alta Verapaz region of Guatemala. Still owned by decedants of the same German family that started it in the 1800s. We used to travel with a bag and load the boat up with it before each cruising season. Unfortunately, we dont spend much time in Guate anymore.
