I realize this thread is old but my gf is a baking whizz and makes AMAZING kneadless sourdough bread in a cast iron Dutch oven. It’s the best bread ever, even better than the sourdough at the tadish grill in San Fran which is my yardstick for sourdough

Go to the King Arthur flour website and use their flour it is far the best bread flour
