Flying fish recipe?

Several years ago I crewed on a sail boat traveling along the west coast of Central America. During the morning hours we would find several flying fish stranded on deck. Following our skipper's example, we threw them over board. Now, I'm wondering has anyone made a meal from these critters. If so, how were they prepared, and how did they taste?



My search of this forum regarding flying fish only revealed stories of people being surprisingly hit by these fish. Not much about eating them.

Gut them and fry until the fins are crispy.

Put them on a big hook and throw them overboard......great bait for real fish

Fry them in a pan with a little butter. They taste good but it takes a few to make a meal.
