Re: Freezing baked bread ?

Good old Costco sells bread in two loaf packs. Just the two of us so we end up freezing one loaf. Has kept in the freezer for several months in the two bags it comes in and still seems fresh. That is Dave's Killer 'Good Seed' bread. Really like the bread, it's a whole grain bread with lots of texture. It keeps its moisture in and out of the refrigerator and for some reason is very mold resistant. It keeps on the counter for weeks in Kona which no other bread will unless it's Wonder Bread which I wonder if it's really bread. It's an Organic bread with no preservatives so a bit of a mystery why it is so mold resistant.

Re: Freezing baked bread ?

I know this is an older thread but I wanted to add one additional bread storage hack. Instead of freezing loafs of bread, takes up a lot of room, make at home with a bread maker dough that is then shaped more like a rolled log, then frozen. I used to purchase frozen bread dough, took it out, painted it with no taste olive oil, let it thaw and rise over night sitting in the oven. Then baked it that morning.

For those that don't have a home other than their boat, or don't have regular access to a land-based home, you can extend this concept to "cooking and baking day(s)" before a passage or periodically during a long cruise. Like many foods that don't have long shelf lives they are based on ingredients that last a long time: yeast, flour, sugar, salt, butter or oil. Making six loaves of bread to feed the freezer (even pre-rise) takes a while, but the clean up work is no more than making one.
