My boat go to snack

My family had a former boat that was destroyed last week in the Lahaina fire. It brought back memories of sailing to Lanai for a few days and snacking on bacon wrapped cheese stuffed jalapeņos. It became a tradition on other boats too. Perfect spicy and savory to go with that sunset rum cocktail.

Srpulpo, so sorry to read of the loss of the family boat. I know there's lots worse right now, but still.....

We pickle hard cooked eggs for snacks. And, in bad weather, we like small cooked potatoes. Just add salt and pepper. Easy to digest, and keeps you going. We have served the pickled eggs for hors d'oeuvres: butter the plain side of a round cracker, and place 3/8" slices of the egg thereon. You can vary the appearance by adding juice from pickled beets (redder eggs). The eggs take on the color of the vinegar used. They are ready to use after 3 days in the pickling solution. And there are lots of recipes for pickling juice on the internet. Pick one that reads well to you. We started this by re-cycling the pickling juice from pickled onions, which we like with cheese on crackers.
