Preserving meat - Part III - Pork Loin in red lard

Good morning

Here is another recipe to preserve meat. This recipe is from Spain and it is called Lomo in mateca colara or Pork Loin in red lard. In this recipe, the meat is preserved by vinegar and lard. We cam keep it for months in the fridge.

We also added at the end one way to prepare it and eat it. We took the footage during our December navigation in the San Juan islands.

In this video, we are experimenting the voice over for the first time. Curious to know your opinion.
