I am convinced its the attention to start and stop temperatures, when to collect the good spirit and not collect the bad.

The bad part is methanol and fusel alcohol, which causes hangover, and extreme cases where the distiller uses all product, even death.

Perhaps some of the commercial distillers try and get those last few dollars from their brew?

I’m no distiller, but it’s an art or taste to know when to cut the head and tail off, what backwoods distillers call it. Temp if you have an extremely accurate thermometer ought to be able to tell, but it’s still detectable by taste even when the temp says there is no more methanol, and whatever it is in the tail. The methanol comes first I’m sure, but something else comes at the end, and you catch the middle

I don't know if anyone mentioned Ed Hamilton and his Ministry of Rum website. I haven't read the entire thread. Lots of interesting stuff on the site. It's a good resource if you want to branch out in your rum drinking.

Ministry of Rum

Ed has sailed around the Caribbean for many years sampling rum and writing about it. He's sponsored a number of tastings using judges who know their rum. The latest, held in 2012, awarded Havana Club two of the three Gold Medals in the Premium Rum category.

Im currently wrapping up a trek to Everest Base Camp. I never even imagined that Nepal had a good rum, but I was pleasantly surprised to discover Khukri rum. Its not a world class rum, but its pretty damn good. Good enough to sip neat or as a top shelf mixing rum.

Mount Gay rum from Barbados is our favorite for sipping. Cap't Morgans is for mixing. Going to drink rum now!

ABC store brand rum at $12 and change for 1.75 literally is good enough for me. It's just sugar and water. No reason it has to be so expensive.

I used to be able to get a superior Mount Gay sugar cane rum, dark and delicious, smooth as roller bearings, but haven’t seen it on the shelf in several years now.
Most of the brand name rums have gone to hell, not anywhere near the flavor they had previously, tastes like watery syrup with some everclear added for alcohol content.
I've taken more to bourbon lately, for a consistent product with a robust flavor that can be enjoyed without having to add soda pop to make it palatable.

If you can find it look for Flor de Cana 7 year, better than the 12 & 18 year IMO. I haven’t been able to find the 25 to test against. Hands down one of the best out there and I drink more rum than my Perkins does oil. I really need to fix that rear seal

Sipping an Havana Club 7yr anejo as I type this... there is a LOT of good rum out there and each countries best is great. That said, we do like to "eat and drink locally" and lo and behold, they are opening a distillery across the street from our current mooring! https://www.thrashersrum.com/
