We just wind the prop down if we need to motor and up for sailing - using a hand operated boat trailer winch, simplicity itself! It seems to stay down of it's own accord - probably the weight of the thing - and we zoom along at 6kn at about 2100rpm using 2.5L/hour so it works just fine.
